SKILLET CORN BREAD
¼ cup cornmeal
1 ½ cup flour
1/3 cup sugar
4 tsp baking powder
¾ tsp salt
1 cup milk
2 eggs
3 Tbsp melted shortening
Combine dry ingredients and mix. Stir in remaining ingredients.
Spoon into greased 8x8" pan or preheated greased cast-iron skillet
or muffin tins. Bake for 20 minutes in 400-degree oven.
